Pizza with spinach, chorizo ​​and tomatoes

Ingredients for 1 servings:

  • 240 g flour
  • 120 g butter, cold, in pieces
  • 2 eggs
  • 2 tbsp water
  • ½ can pizza tomatoes (pizza sauce)
  • 100 g chorizo, sliced
  • 450 g creamed spinach
  • e.g. cherry tomatoes
  • 3 eggs
  • some cheese, grated

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Sift the flour into a large bowl, add the butter and mix into crumbs. Add 2 eggs and water and knead everything with your hands until you have a smooth dough. Wrap the dough in cling film and refrigerate for about 30 minutes. Then roll the dough out on a baking tray lined with baking paper and form a rim. Spread half of the pizza sauce evenly over the dough. Cover with the chorizo ​​slices and scatter the creamed spinach on top. Halve as many cherry tomatoes as you like and scatter them over the pizza for a bit of color. Finally, crack the eggs, spread them over the topping and sprinkle with the cheese. Bake the pizza in the oven at 180°C for 20-30 minutes until the cheese has melted. Sprinkle with a little oregano after baking.
