Ingredients for 1 servings:

  • 250 ml water, lukewarm
  • 1 point dry yeast
  • 175 g flour (white flour)
  • 100 g corn flour
  • ¼ tsp salt
  • 1 tsp sugar
  • 2 tbsp oil
  • Flour for the work surface
  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 medium-sized onions, chopped
  • 100 g Cabanossi or soy sausages, sliced
  • ½ bell pepper(s), green, chopped
  • ½ red pepper(s), chopped
  • ½ tsp oregano
  • ½ tsp white pepper
  • ½ tsp salt
  • ½ tsp cayenne pepper
  • ½ tsp thyme
  • 400 g tomatoes, chopped (can)
  • 100 ml tomato juice (from draining)
  • 50 g Cheddar cheese, grated
  • 1 tbsp spice mix (cayung spice)

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours 15 minutes

For the dough, mix 250 ml of lukewarm water, yeast, corn flour, and white flour thoroughly. Then add the rest and stir the dough until smooth. Knead the dough for 5 minutes on a floured surface, adding a little more flour if necessary. Let it rise in a warm place at 30-40°C for about 1 hour. Then knead it into a ball and let it rest for another 20 minutes before rolling it out. For the topping, sauté the oil, garlic, and onion in a saucepan until translucent. Then add the sausage slices. When the heat is high, add the spices. Let everything rest for 5 minutes, then add the chopped tomatoes. While stirring, boil off almost all of the liquid and spread the finished topping over the rolled out dough. Sprinkle the grated cheese on top. Bake in a preheated oven at 250°C (top/bottom heat) for about 15-20 minutes.
