Elderberry and pear jam

Ingredients for 4 servings:

  • 500 g elderberries
  • 500 g pear(s)
  • 1 kg gelling sugar 1:1
  • e.g. vanilla extract or cinnamon

Instructions

Working time approx. 45 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 55 minutes

Roughly pick the elderberries; they will go through a sieve later, and wash thoroughly. Heat the berries in a saucepan with a little water until they release their juice. Then pass them through a sieve. Peel the pears and remove the cores. They don’t need to be chopped. Heat the pears, the pureed berries, the gelling sugar, and the cinnamon or vanilla extract together in a large saucepan. Be careful, it can boil over quickly! After 5 minutes of cooking, puree with a hand blender. Pour the jam, while still hot, into preserving jars. Seal the jars and let cool.
