Ingredients for 4 servings:
- 1 leg(s) (turkey thigh), boned
- 1 mango(s), ripe
- 600 g potatoes
- 200 g bacon (belly bacon), streaky
- 40 g instant chicken broth
- 20 g sauce thickener, dark
- 1 bell pepper(s), red
- 2 chili peppers, red
- 1 vegetable onion(s)
- 1 tsp sweet paprika powder
- 2 tsp spice mix (chili-garlic)
- 1 tsp sea salt
- 8 tbsp oil (peanut oil)
- 2 tbsp soy sauce
- 1 onion(s), red
- ½ liter of water
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
First, mix the oil with the spice mix in a roasting pan. To do this, mix together 4 tablespoons of peanut oil, 2 tablespoons of soy sauce, half a teaspoon of sea salt, 1 teaspoon of paprika powder, and 1 teaspoon of chili-garlic powder. Cut the boned turkey leg in half, coat it vigorously in the spice marinade, and rub it in so vigorously that almost all of the marinade sticks to the meat. Place the roasting pan and contents – skin-side up – in a preheated oven on the middle rack at approx. 180°C for approx. 40 minutes. In the meantime, clean the bell pepper and cut it into equal-sized diamonds. Peel the onion and cut it into roughly the same size pieces. Finely dice the chili peppers. Peel the mango and cut it into slightly larger cubes. Remove the turkey from the roasting pan. Pour 1/2 liter of water into the roasting pan, scraping up any juices from the bottom. Stir in the chicken stock. Add the chopped vegetables. Place the turkey back in the pan, skin-side up. Return the whole thing to the oven and roast for another 40 minutes. Cut the bacon into thin strips. Peel the potatoes and also cut them into strips. Fry the potatoes in heated oil until golden brown and drain well. Fry the bacon in a pan without oil until crispy. Peel the red onion and cut it into strips. Add it to the bacon and let it become slightly translucent. Add the potato sticks and season with a little sea salt and paprika. Remove the turkey from the roasting pan and wrap it in aluminum foil until it is ready to slice. Thicken the liquid in the roasting pan with a little sauce thickener. Add the mango cubes and let it warm up a little. Arrange everything in portions on plates and serve immediately.
