Ingredients for 2 servings:
- 3 m.-large zucchini
- 500 g minced meat, mixed
- 1 m.-sized egg(s)
- some breadcrumbs
- some mustard, medium hot.
- 1 medium-sized onion(s), diced
- salt and pepper
- Paprika powder
- Parsley, frozen or dried
- 1 large can of tomatoes
- n. B. garlic
- lots of oregano
- Pepper or Tabasco
- 1 pack of cheese, for gratinating
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Place the tomatoes in a sufficiently large baking dish and break them up slightly with a fork, then stir in the chopped garlic, oregano, and pepper or Tabasco. Halve the zucchini lengthwise and scoop out the seeds with a spoon (be careful not to discard them; they will be needed for the minced meat mixture). Chop the zucchini seeds and add them to the minced meat. Mix with the egg, mustard, onion, parsley, salt, pepper, and paprika. Divide the minced meat evenly between the zucchini halves and place them on top of the tomatoes. Place in the oven at approximately 170°C (convection oven) for 15 minutes, then sprinkle with the grated cheese and bake for another 15-20 minutes. Serve with rice or simply with baguette.
