Spiced pancakes with raw ham cubes and grated cheese

Ingredients for 2 servings:

  • 250 g flour
  • 250 g milk
  • 250 g natural yogurt
  • 150 g raw ham, diced
  • 100 g Gouda, grated
  • 3 eggs
  • 7 ½ g salt
  • 1 ½ g pepper
  • 1 ½ g nutmeg
  • 11 g baking powder
  • Oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

Weigh all ingredients, mix spices, salt, and baking powder evenly with the flour, add eggs, milk, and yogurt, whisk with a hand blender, and let stand for about 1 hour. Heat oil in a non-stick pan over medium heat, spread a little batter evenly in a pan (a reversible pan is ideal), top with diced ham and grated cheese, and add another layer of pancake batter. When the pancake batter starts to bubble, flip and fry until nicely browned. The recipe makes 6 pancakes (12 cm in diameter). Serve with lettuce. They taste even better cold.
