Oven-baked root vegetable mix

Ingredients for 4 servings:

  • 1 kg mixed root(s) (carrots, beetroot, parsnips, parsley root)
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 1 orange(s)
  • 8 sprigs of thyme
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Wash, peel, and roughly chop the root vegetables. Blanch the beets in boiling water for about 5 minutes and drain in a sieve. Toss the root vegetables in a mixture of olive oil, honey, and orange juice and place in an ovenproof dish. Season with salt and pepper and add the thyme sprigs. Bake the root vegetables in the oven at 190°C (375°F) for about 40 minutes, until golden brown.
