Quick spaghetti á la Eddie

Ingredients for 2 servings:

  • 250 g pasta (spaghetti or spaghettini)
  • 1 small onion(s)
  • 2 garlic cloves
  • 1 chili pepper(s) (fresh)
  • 2 tsp Aglio, Olio et Peperoncino seasoning mix (alternatively pizza and spaghetti seasoning)
  • 2 tomatoes, dried
  • 1 handful of cherry tomatoes
  • salt and pepper
  • Sugar
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the spaghetti al dente. Chop the onion, garlic, chili, and sun-dried tomatoes and fry in olive oil. Briefly toast the seasoning. Add a little of the pasta water. Simmer for about 10 minutes. Finally, add the fresh, finely chopped tomatoes and simmer for about 5 minutes. Season to taste with sugar, salt, and pepper. Stir in the spaghetti and serve. The amounts of garlic and chili are generous because I like it a lot. Add all the ingredients to taste, of course. Serve with a Chianti!
