Ingredients for 6 servings:
- 2 zucchinis
- 1 tomato(s)
- some parsley leaves
- 1 bunch of chives
- n. B. Borage
- 1 cup of crème fraîche or cream, lactose-free if required
- 3 tbsp tomato paste
- 2 tsp lemon juice
- Sea salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Wash and peel the zucchini and cut into small pieces. Then fry in a little oil until tender, season with salt and pepper. Also cut the tomato into small pieces. Blend in a sufficiently large container, chop the chives, parsley, and borage, add, and blend again. Add the zucchini and blend. Stir in the crème fraîche or cream and tomato paste, heat through, and season with lemon juice.
