Hot, Hearty Omelette with Broccoli

The perfect hot, hearty omelette with broccoli recipe with a picture and simple step-by-step instructions.

  • 250 g Broccoli
  • 1 Knoblauchzehe
  • 1 the size of a walnut Ginger
  • ½ rote Chilischote
  • 1 tbsp Sunflower oil
  • 1 tsp Mild curry powder
  • 200 ml Chicken broth (1 teaspoon instant broth)
  • 2 Eggs
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 2 big pinches Chilli flakes
  • 1 Strauchtomate zum Garnieren
  1. Clean the broccoli and cut into small florets. Peel the stalk generously and cut into sticks. Peel and dice the onion. Peel and finely dice the garlic clove and ginger. Clean / core the chilli pepper, wash and finely dice. Beat the eggs, season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches) and beat / whisk with a fork, heat sunflower oil (1 tbsp) in a pan, heat the vegetables (onion cubes + garlic clove cubes) + Diced ginger + diced chili peppers and broccoli florets with the broccoli sticks) and sauté / stir fry for 4 – 5 minutes. Season / dust with mild curry powder (1 teaspoon) and deglaze / pour on the chicken stock (200 ml). Let everything simmer / cook for another 3 minutes. Drizzle the whisked eggs over it and let everything stand slowly without stirring. Finally sprinkle with chilli flakes (2 big pinches), garnish with a bouquet tomato and serve in the pan.
