Ingredients for 1 servings:

  • 1 kg kiwi(s), green, very ripe
  • 500 g zucchini, small, green
  • 500 g gelling sugar 3:1

Instructions

Working time approx. 20 minutes; Rest time approx. 10 hours; Cooking/baking time approx. 4 minutes; Total time approx. 10 hours 24 minutes

Zucchini-kiwi jam

Peel and roughly chop the kiwis. Finely grate the unpeeled zucchini (remove the core from larger zucchini). Weigh both and mix well with the preserving sugar. Let the mixture sit overnight. Then cook according to the sugar package instructions until jam is smooth. Usually, this means bringing to a boil while stirring and simmering for 4 minutes. A set test is recommended. Immediately fill clean screw-top jars to the brim while still hot, seal, and let cool upside down. If you prefer it less sweet, simply increase the amount of zucchini.
