Baked salmon slices

Ingredients for 4 servings:

  • 4 salmon fillets, 250 g each
  • salt and pepper
  • Cayenne pepper
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 3 tbsp breadcrumbs
  • 60 g butter or margarine
  • 150 ml white wine or vegetable stock
  • Parsley

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Season the salmon fillets with salt, pepper, and cayenne pepper. Drizzle with lemon juice and let stand for 10 minutes. Pour olive oil into a baking dish and place the salmon fillets in it. Sprinkle the fish fillets with breadcrumbs and scatter butter on top. Pour in white wine or vegetable stock and cook the fish in a preheated oven at 180°C for about 25 minutes. Sprinkle with parsley. Serve with potatoes or risotto and a fresh salad.
