Skate wings with dark butter sauce and capers

Ingredients for 4 servings:

  • 4 pieces of fish (ray wings, approx. 200 g each)
  • 6 tbsp butter
  • 1 tbsp capers
  • 4 tbsp vinegar (white wine vinegar)
  • Salt
  • black pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Poach the skate wings for 10-15 minutes in water with a few drops of vinegar. Drain the fish. Keep warm in the oven over low heat. Melt the butter until it begins to brown. Add the capers and vinegar. Season, simmer vigorously for 30 seconds, then pour over the fish. Serve with small new potatoes to soak up the delicious butter.
