Ingredients for 1 servings:

  • 250 g wholemeal flour
  • 450 ml milk
  • 2 eggs
  • 50 g butter
  • 1 pinch of salt
  • 500 g blueberries
  • 500 g low-fat curd cheese
  • 200 g cream, liquid
  • 35 g sugar
  • 1 packet of vanilla sugar
  • 10 g lemon juice, 100% pure
  • Cream for decoration
  • Powdered sugar for dusting
  • Berries for decoration

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Recipe for 12 pieces

To make the crêpe batter, crack the eggs into a bowl and add a pinch of salt. Then add the milk and then the flour to avoid lumps in the batter. Finally, heat the butter in a bowl and stir in the melted butter. To allow the batter to expand, place it in the refrigerator for about 20-30 minutes before use. Meanwhile, mix the blueberries with the quark, cream, sugar, vanilla sugar, and lemon juice in a bowl. In the photo, the blueberries were added last. However, we recommend mixing the blueberries into the quark to also enjoy the delicious blueberry flavor. Then bake the crêpes in a crêpe maker or in a pan. Finally, spread the crêpes with the blueberry quark and decorate them with cream, powdered sugar, and more berries on the plate. Makes 12 crêpes.
