Ingredients for 1 servings:
- 300 g spelt flour
- 120 g sugar
- ¾ pack of baking powder
- 1 banana(s), very ripe, skin with brown spots
- 100 ml soy milk (soy drink)
- 100 ml oil, tasteless
- n. B. Food coloring, red, blue, green, yellow

Working time approx. 20 minutes; Cooking/baking time approx. 22 minutes; Total time approx. 42 minutes
Lactose-free, suitable for children’s birthdays, makes approx. 10 – 12 muffins
Preheat the oven to 175°C (top/bottom heat). Place muffin cups in a muffin tin. Mix all dry ingredients. Puree the peeled banana in a blender and mix with the soy milk and oil. Add the wet ingredients to the dry ingredients and mix with a hand mixer for about 2 minutes. If the batter is too stiff, add a little more soy milk. Divide the batter into four equal parts and color each part a different color to your liking. Fill the muffin cups three-quarters full, using about 1 tablespoon of each color. Bake in the hot oven on the middle rack for about 22 minutes. Use a skewer to test if the batter is done. This amount of batter makes about 10-12 muffins.
