Ingredients for 2 servings:

  • 400 g turkey meat
  • 2 tsp oil
  • 1 onion(s)
  • some mushrooms (as desired)
  • some vegetable stock cubes
  • ½ pineapple, fresh (or canned)
  • 60 ml coconut milk
  • curry

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with coconut milk

Brown the turkey in the oil. Finely chop the onion and mushrooms and add them. Add a little pineapple juice and some vegetable broth powder. Cover and let it simmer for a while. Deglaze with a little water. Add the chopped pineapple. Stir in the coconut milk and season with curry. I served it with rice, which I also stirred into a little curry. For WW fans: This recipe deserves 6.5 points per person.
