Ingredients for 1 servings:

  • 2 kg grapes
  • 400 ml balsamic vinegar
  • 250 g sugar
  • 150 ml Madeira

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Boil the grapes for about 10 minutes, mash them thoroughly, and pass them through a sieve. Gently caramelize the sugar in a separate saucepan. Be careful not to burn the caramel. Pour in the hot grape juice and stir until the caramel has completely dissolved. Add the vinegar and Madeira wine and simmer gently, uncovered, until the liquid reaches a thick, creamy consistency. Bottle and let the cream cool. It goes well with poultry, game, pork, beef, and salads.
