Stuffed cucumber slices

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 300 g minced meat
  • 2 eggs
  • 1 small onion(s)
  • Paprika powder, sweet
  • salt and pepper
  • dill
  • Breadcrumbs
  • Coconut oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the cucumber and cut into thick slices, then use a sharp knife to scoop out the insides of each slice. Pat the slices dry, place them side by side on a surface, and season both sides with salt and pepper. Season the minced meat with an egg and the spices to taste, peel the onion, and mix it in finely chopped. Fill each cucumber slice with some of the minced meat. Hold the slice in the palm of your hand, press in some of the minced meat, turn the slice over, and shape it into a small half-moon. Beat an egg in a shallow bowl. Pour the breadcrumbs into another shallow bowl and coat the filled cucumber slices in breadcrumbs. Heat the coconut oil in a pan, fry the cucumber slices briefly on both sides over high heat, and simmer at low heat for another 15 to 20 minutes. Serve with a mixed salad or simply with tzatziki.
