Zucchini – Tomato Mince

Ingredients for 2 servings:

  • 1 large zucchini
  • 2 m.-large tomato(s)
  • 200 g minced meat (pork)
  • 1 cup sour cream (alternatively sour cream or sweet cream to taste)
  • Salt
  • pepper
  • Fat for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the minced meat in the heated frying fat, season with salt and pepper. Meanwhile, wash and slice the zucchini. When the minced meat is the desired brown color, add the zucchini slices and continue frying for a short while. Wash the tomatoes and slice them as well. Then add them to the pan. Stir, cover the pan, and simmer briefly over low heat. After about 2-3 minutes, stir in the sour cream and simmer for a few more minutes. Serve with rice or baguette.
