Mirabelle balsamic vinegar

Ingredients for 1 servings:

  • 1 kg mirabelle plums
  • ½ liter balsamic vinegar, white
  • 2 tbsp brown sugar

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Wash, halve, and pit the mirabelle plums. Sauté with 50 ml of balsamic vinegar and the sugar until soft. Purée with a hand blender and let cool. Strain through a fine sieve; this depends on how much suspended solids you want in the vinegar. Now top up with the remaining balsamic vinegar and season to taste. Add a little more balsamic vinegar or brown sugar depending on the acidity and ripeness of the fruit. Bottle; the vinegar is ready to serve. Goes well with all leaf salads and any vinaigrette that can tolerate a pinch of sugar.
