Ingredients for 10 servings:
- 2 kg potatoes, small, round
- Salt
- 2 bunch spring onions
- 2 bunch radishes
- 150 g smoked streaky bacon
- 125 ml oil
- 125 ml vinegar (herb vinegar)
- White pepper, freshly ground
- 2 tbsp sugar
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Boil the potatoes in salted water for about 20 minutes. In the meantime, clean and wash the radishes and spring onions. Slice the radishes and thinly slice the spring onions. Finely dice the bacon. Let the potatoes cool slightly. Then peel and place in a bowl. Fry the bacon in a pan until crispy. Deglaze with oil and vinegar, heat briefly, and season with salt, pepper, and sugar. Add the radishes and spring onions to the pan for about 2 to 3 minutes, stirring gently. Finally, pour everything into a bowl over the potatoes and mix. Let it marinate for a while, then serve.
