Ingredients for 1 servings:

  • 1 celeriac
  • n. B. water
  • 1 apple (e.g. Boskoop), peeled, finely diced
  • 1 onion(s), peeled, finely diced
  • 6 walnuts, finely chopped
  • some vegetable oil or walnut oil
  • some apple cider vinegar or walnut vinegar
  • some salt and pepper, white
  • some red wine, dry

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 45 minutes

Place the celery root in a large pot, fill with water, cover, and bring to a boil. Cook the celery root until al dente, let cool, peel, and dice. Add the apple, onion, and walnuts. Season with salt and pepper, add the oil, vinegar, and red wine, and mix well. Adjust the seasoning if desired. Let the finished celery salad sit for 1-2 hours before serving.
