Cooked ham aspic

Ingredients for 1 servings:

  • 450 g cooked ham, cut into approx. 2 – 3 cm cubes
  • 15 g pepper, green from the jar
  • 2 peppers, red from the jar, cut into 2 – 3 mm thick slices
  • 75 g carrot(s), sliced, cooked until al dente
  • 30 g pistachios, whole kernels
  • 4 medium-sized gherkins, cut into 5 mm thick slices
  • 900 g water
  • 100 g vinegar
  • 1 cube of broth (clear soup, 2 half cubes)
  • 2 dashes of Maggi
  • 120 g aspic powder with 200 bloom

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Total time approx. 1 day 1 hour

yields approx. 1700 g

Bring the water and vinegar to a boil with the stock cube and season with Maggi. Let the mixture cool, stir in the aspic powder, and let it swell for 10 minutes. Mix well and heat in the microwave, stir again, and pour into prepared containers along with the fillings. Now place the aspic in the refrigerator. Check it every 30 minutes. When it has thickened slightly, stir again to distribute the filling evenly. The next day, briefly immerse the container in hot water and turn the aspic out.
