Silesian cucumber bites

Ingredients for 1 servings:

  • 2 kg cucumber(s) (farmer’s) or country cucumbers, peeled and cut into 1 cm thick slices
  • 500 ml white wine vinegar
  • ½ liter of water
  • 500 g sugar
  • 2 small onions, halved and sliced
  • 1 tbsp salt
  • Mustard seeds
  • Peppercorns, white
  • coriander
  • Juniper berry(s)
  • Allspice
  • bay leaves
  • Dill flowers

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Farmer’s cucumbers

The spices should be no more than a handful in total. Make a broth from all the ingredients except the cucumbers, dill blossoms, and onions and boil for about 4 minutes. Add the cucumber slices and boil for another minute. Divide one dill blossom per jar and the onions between the preserving jars, along with the cucumbers. Bring the broth back to a boil and fill the jars with it. Seal and turn upside down. If you want to be on the safe side, you can boil the jars at 80°C for 40 minutes. I always put the dill blossom in the preserving jar first because it looks better afterwards.
