Ingredients for 1 servings:
- 2 ½ kg cucumber(s)
- 2 tbsp salt
- 250 g onion(s), finely chopped
- 2 tbsp mustard seeds
- 5 bay leaves, broken into pieces
- 1 tsp pepper, white grains
- 750 ml vinegar
- 1 liter of water
- 175 g sugar

Peel the cucumbers, remove the seeds, and cut into pieces about 1 cm thick. Sprinkle with the 2 tablespoons of salt and add enough water to cover. Leave to marinate in the refrigerator for 24 hours. The next day, drain well and rinse briefly under running water to wash away the salt. Heat the other ingredients in a saucepan and simmer the cucumber pieces gently for about 10 minutes; they should still have a bite. While still hot, fill boiled jars with the stock almost to the top. Immediately close tightly and turn upside down (on a tea towel). Then leave to cool. After a few weeks of marinating, they are ready to taste. If you don’t like onions, you can leave them out; this will not significantly affect the flavor.
