Bread salad with halloumi cheese

Ingredients for 4 servings:

  • 8 slice(s) bread(s), stale, roughly diced
  • 2 tbsp olive oil
  • 2 garlic cloves, chopped
  • 400 g Halloumi, torn into pieces
  • 200 g cocktail tomatoes, halved
  • 2 onions, red, cut into strips
  • 1 lemon(s), organic, zest and juice
  • ½ bunch leaf parsley, chopped
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Toast the bread cubes in 1 tablespoon of oil until crispy all over. Add the garlic and fry for about 1 minute. Fry the cheese in 1 tablespoon of oil in a pan for about 2 minutes on all sides. In a large bowl, toss the bread croutons with the cherry tomatoes, onion strips, lemon juice, and parsley. Season the salad with salt and pepper. Carefully fold in the halloumi cheese and add the lemon zest. Serve the salad immediately. It contains approximately 686 kcal per serving.
