Quince Vinegar Balsam

Ingredients for 1 servings:

  • 500 ml quince juice
  • 500 ml white wine vinegar, mild, 5% acidity
  • 3 tbsp honey, rather thick

Combine quince juice, white wine vinegar (e.g., Condimento Bianco), and about 3 tablespoons of honey (use sparingly; sweeten to taste!) in a sufficiently large saucepan and reduce over high heat until reduced by about half. Thick honey enhances the syrupy consistency and adds a beautiful color. Alternatively, you can use white or brown sugar. The reduction takes about 30-40 minutes, depending on the size of the pan. While still hot, pour through a fine sieve into a preheated bottle. If necessary, strain again after cooling until the balm is clear. The quince and vinegar balm will keep for about a year.
