Ingredients for 10 servings:
- 2 heads of iceberg lettuce
- 2 small cans of pineapple, chopped (drained weight 340 g each), alternatively fresh pineapple
- 2 small cans of mandarin oranges (drained weight 175 g each), alternatively fresh mandarin oranges
- 3 kiwis
- 250 g mayonnaise (salad mayonnaise)
- 4 tbsp tomato ketchup
- 4 tbsp orange juice
- 100 g natural yogurt
- 1 tsp honey
- Salt
- Pepper, freshly ground
- 1 pinch of chili powder
- 1.2 kg chicken schnitzel
- Paprika powder, hot
- curry powder
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Wash the iceberg lettuce and cut into bite-sized pieces. Peel the kiwis and cut into small pieces or slices. Drain the pineapple and mandarin oranges. Place them in a large bowl along with the lettuce and kiwis and mix together. Season the chicken schnitzels with salt, pepper, paprika, and curry powder to taste. Fry on both sides in a hot pan. Allow the schnitzels to cool, then cut into bite-sized pieces, then add to the salad. Finally, mix all the ingredients for the dressing together well and drizzle over the salad.
