Fruity chicken salad

Ingredients for 10 servings:

  • 2 heads of iceberg lettuce
  • 2 small cans of pineapple, chopped (drained weight 340 g each), alternatively fresh pineapple
  • 2 small cans of mandarin oranges (drained weight 175 g each), alternatively fresh mandarin oranges
  • 3 kiwis
  • 250 g mayonnaise (salad mayonnaise)
  • 4 tbsp tomato ketchup
  • 4 tbsp orange juice
  • 100 g natural yogurt
  • 1 tsp honey
  • Salt
  • Pepper, freshly ground
  • 1 pinch of chili powder
  • 1.2 kg chicken schnitzel
  • Paprika powder, hot
  • curry powder

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash the iceberg lettuce and cut into bite-sized pieces. Peel the kiwis and cut into small pieces or slices. Drain the pineapple and mandarin oranges. Place them in a large bowl along with the lettuce and kiwis and mix together. Season the chicken schnitzels with salt, pepper, paprika, and curry powder to taste. Fry on both sides in a hot pan. Allow the schnitzels to cool, then cut into bite-sized pieces, then add to the salad. Finally, mix all the ingredients for the dressing together well and drizzle over the salad.
