Ingredients for 1 servings:

  • 500 g raspberries
  • 500 ml raspberry vinegar, recipe in my profile
  • 100 g raspberry jam, without seeds
  • ¼ tsp spice mix (Poivre saveur), recipe in my profile

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Raspberry vinegar + raspberry

Boil the raspberries with a little water, then strain them through a food mill and then again through a fine sieve. There should be no seeds left. Combine the raspberry puree and all other ingredients in a saucepan, bring to a boil, and then pour into small bottles. Due to its high acidity, it will keep for at least 1 year. This seasoned vinegar is very mild and fruity and tastes great with winter salads. It can also be used to flavor sauces for game and beef dishes.
