Meadow Girl's Breakfast Granola

Ingredients for 4 servings:

  • 150 g oat flakes, wholegrain
  • 25 g almonds
  • 20 g peanuts, peeled
  • 15 g sunflower seeds
  • 10 g sesame seeds
  • ½ pinch(s) of salt
  • ½ pinch(s) vanilla
  • ½ pinch(s) cinnamon
  • 50 g honey
  • 30 g coconut oil
  • 1 tsp chia seeds or hemp seeds

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Preheat oven to 180°C (top/bottom heat). Line a baking sheet with paper. Roughly chop the nuts. Mix everything except the honey and coconut oil in a large bowl. Place the coconut oil and honey in a small glass and melt in the microwave (maximum 1 minute at 400W). Pour into the mixture and mix thoroughly with a spoon. Spread the mixture on the baking paper and bake for 10 minutes at 180°C on the middle rack. Remove from the oven, turn everything over with a spatula, and spread it out again. Bake for another 5 minutes; do not allow it to overcook! Remove from the oven and let it cool completely on the paper. Crumble the granola and store in an airtight container (maximum two weeks).
