Mango-Pineapple Chutney

Ingredients for 1 servings:

  • 300 g mango(s) (net flesh in cubes)
  • 300 g pineapple (net flesh in cubes)
  • 100 g sugar
  • 1 bell pepper(s), yellow, diced
  • 1 medium-sized onion(s), chopped
  • 1 tbsp ginger, grated
  • 1 chili pepper(s), Thai (or more), in rings
  • 2 tsp salt
  • 2 tsp curry, Madras
  • 5 tbsp rice vinegar
  • 100 ml white wine
  • n. B. water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Melt the sugar in a saucepan, add the diced onion, diced bell pepper, pineapple chunks, diced mango, chili rings, and ginger, stir briefly, and then deglaze with white wine. Add vinegar and salt, adding a little more water if needed! Simmer for about 30 minutes, season with curry, and simmer for another 10 minutes! While still hot, pour into prepared (boiled) jars and let cool upside down.
