Ingredients for 4 servings:
- 1.3 kg potatoes, large, peeled
- 1 large green apple, peeled and pitted
- 1 small onion(s), peeled, grated
- White pepper, freshly ground
- ½ tsp rosemary, dried
- 2 cloves garlic, peeled, crushed
- 2 eggs, lightly beaten
- 2 tbsp olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Preheat oven to 210°C. Cut the potatoes and apple into approximately 5 cm long, matchstick-thick strips and place in a bowl. Stir in the onion, pepper, rosemary, garlic, and eggs. Heat the oil in a round baking tray for 5 minutes, spread the mixture on top, and bake for 20 minutes until golden brown. Cut the potato cake into wedges to serve. Serve with herring tartare, smoked salmon, crème fraîche, or a herb dip.
