Chicken Cacciatore

Ingredients for 4 servings:

  • 1 chicken, cut into 8 pieces
  • 1 cup(s) flour
  • 300 g mushrooms (shiitake), finely chopped
  • 2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cup(s) white wine
  • 1 large can of tomatoes, peeled and roughly chopped
  • 1 cup(s) tomatoes, pureed
  • 2 cups chicken broth
  • 1 bay leaf, thyme, basil
  • 2 ½ tbsp paprika powder
  • 2 tbsp salt
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp black pepper
  • 1 tbsp cayenne pepper
  • 1 tbsp oregano
  • 1 tbsp thyme
  • olive oil
  • possibly tomato paste
  • Parmesan
  • 1 bunch parsley, finely chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the paprika, salt, garlic powder, onion powder, pepper, oregano, and thyme well and rub the meat well with it. Mix a little of this seasoning with the flour and toss the chicken pieces in it. Heat the olive oil, brown the meat on all sides, remove and set aside. Sauté the onions in the remaining cooking liquid, add the garlic and mushrooms, and season with salt and pepper. After 2 minutes, add the wine, tomatoes, and stock and bring to a boil. Stir in the thyme, bay leaf, and basil. Return the meat to the pot and simmer over reduced heat for about 1 hour. Then, if desired, season the sauce with the seasoning and/or thicken with tomato paste. Sprinkle with Parmesan cheese and parsley to serve. Serve with pasta.
