Leek vegetables with apples and sunflower seeds

Ingredients for 4 servings:

  • 500 g leek(s), preferably of the same size
  • 500 g apples, sour
  • 3 tbsp butter
  • 3 tbsp sunflower seeds
  • 125 ml vegetable stock
  • some cumin
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Carefully clean the leeks, removing any damaged or wilted leaves. Split the stalks and rinse thoroughly. Finally, cut them diagonally into thin slices. Peel and quarter the apples, remove the cores, and cut them lengthwise into thin wedges. Sauté the leeks and apple pieces in 2 tablespoons of butter, season with salt and pepper, and sprinkle with cumin. Deglaze with stock and simmer uncovered for a few minutes. Meanwhile, in a small pan, toast the sunflower seeds in the remaining butter and sprinkle over the vegetables.
