Panna Cotta Blueberry

Ingredients for 2 servings:

  • 6 sheets of gelatin
  • 300 ml cream
  • 250 g blueberries, fresh or frozen
  • 6 tsp sugar
  • 1 lemon(s)
  • 100 ml water
  • 1 vanilla pod(s), including the pulp

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 15 minutes; Total time approx. 5 hours 25 minutes

Mix the blueberries with a little sugar and lemon juice and puree. Soak 3 gelatin leaves in water for 5 minutes. Boil in 100 ml of water and stir, then stir in the blueberry puree. Pour into glasses and let set in the refrigerator for 2-3 hours. For the panna cotta, put the cream, vanilla bean paste, the remaining sugar, and 3 gelatin leaves in a saucepan. Bring to a boil and simmer for 10-15 minutes, stirring constantly. Let cool to room temperature. Pour the panna cotta over the blueberry mixture and then return to the refrigerator for a good 2 hours. Garnish and serve as desired.
