Ingredients for 3 servings:

  • 4 large tomatoes
  • 2 balls of mozzarella
  • 5 basil leaves
  • 6 slice(s) turkey breast, smoked or cooked
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp water
  • 1 pinch(s) of salt and pepper
  • possibly baguette(s) as a side dish

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

as a starter or light meal with turkey breast, tomatoes, mozzarella, basil

Wash and slice the tomatoes. Cut the mozzarella into medium-thick slices. Halve the turkey breast slices. For the dressing, whisk together at least 6 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, and 1 tablespoon of water (you can vary the amount according to your taste). Finely chop the basil and add it. Season with salt and pepper. Brush a small baking dish with olive oil and alternate layers of tomatoes, turkey breast, and mozzarella, finishing with mozzarella. Drizzle a little dressing over each layer. Bake the casserole for 18 minutes in an oven preheated to 190°C. Check occasionally to see if the mozzarella has browned or melted. Serve the casserole with the sauce. I always serve it with Mediterranean baguette. If you like, you can also vary the casserole with pesto, mushrooms, or other quick-cooking vegetables. This casserole will feed three people if it is served with a filling side dish such as bacon. B. bread is served with it.
