Kritharaki One-Pot Greek Style

Ingredients for 3 servings:

  • 250 g Kritharaki (rice-shaped noodles)
  • 300 g minced beef
  • 1 onion(s)
  • 3 garlic cloves
  • 4 tbsp ajvar
  • 150 g natural yogurt
  • 300 ml vegetable stock
  • 200 ml cream or cream substitute
  • 1 large bell pepper(s)
  • 200 g feta cheese or shepherd’s cheese
  • e.g. salt and pepper
  • Paprika powder, sweet and/or hot
  • n. B. herbs, Mediterranean
  • some olive oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the onions and chop the garlic, then fry them with the minced meat in a little olive oil. When the meat is browned, reduce the heat and add the ajvar. Mix everything well and simmer on low heat. Then add the natural yogurt, vegetable stock, and cream, and season the sauce with salt, pepper, Mediterranean herbs, and paprika. Add the kritharaki and simmer on medium heat until the pasta is tender (this will take a little longer than the package instructions indicate). Finely chop the bell pepper and feta cheese, and stir in. Heat briefly on a higher heat, stirring continuously. Then it’s ready to serve.
