Mint-melon jam

Ingredients for 1 servings:

  • 700 g melon(s) (water), seedless, the flesh of which
  • 2 tbsp lemon juice
  • 1 pack of citric acid
  • 5 sprigs of fresh mint
  • 500 g extra gelling sugar (2:1 or 3:1)

Summer in a glass

Finely dice the watermelon flesh and place it in a saucepan. Mix it with the lemon juice, citric acid, and gelling sugar, and bring it to a boil. Using a large spoon, scoop out the large pieces of flesh and place them in a suitable container. You can then briefly puree the flesh with a hand blender. Small pieces can remain if you like. Return everything to the saucepan and bring to a boil for 5 minutes. Pick the leaves from the washed and shaken-dry mint and roughly chop them. Add them to the melon mixture, stir briefly, and then pour the jam into the prepared jars. Turn upside down for 10 minutes. After one day, the jam is ready to serve. This quantity makes about 3-4 jars.
