Wax bean salad with mortadella

Ingredients for 4 servings:

  • 600 g beans (wax beans), fresh
  • Water (salt water)
  • 200 g cherry tomatoes
  • 2 bags of ready-made salad dressing mix (garden herbs with garlic)
  • 12 tbsp tomato juice
  • 200 g sausage (poultry mordatella), in wafer-thin slices
  • 50 g parsley
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and trim the beans, then cook in boiling salted water for about 8-10 minutes until al dente. Then pour into a sieve, rinse, and drain. Wash the tomatoes and halve or quarter them, depending on their size. Mix the salad dressing with tomato juice and a pinch of sugar. Mix the beans, tomatoes, and poultry sausage. Spread the salad dressing on top. Garnish with parsley. Serve with hearty wheat bread.
