Bean and tomato salad with bacon

Ingredients for 4 servings:

  • 500 g green beans
  • 1 bunch of savory
  • 1 onion(s) (possibly red)
  • 300 g cherry tomatoes
  • 2 tbsp herb vinegar
  • 50 g breakfast bacon
  • 1 tbsp oil
  • 2 tbsp parsley, flat, chopped
  • Paprika powder, hot
  • Salt and pepper, black

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Salad of green beans, bacon and tomatoes

Wash and trim the beans and cut into 3-4 cm pieces. Cook with the savory and a teaspoon of salt until al dente, then let cool. Peel and finely dice the onion, wash and quarter the tomatoes. Finely dice the bacon. Mix the vinegar and oil together and season with salt, pepper, and paprika. Mix the beans and tomatoes into the sauce. Season again. Shortly before serving, fry the bacon cubes in a pan until crispy and toss them into the salad along with the chopped parsley.
