Ingredients for 3 servings:

  • 200g quinoa
  • 150 g mushrooms
  • 150 g cucumber(s)
  • 1 onion(s)
  • 1 cup of cream
  • Salt and pepper, mixed from the mill, to taste
  • Nutmeg, freshly grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

as a side dish

Wash the quinoa and cook it in water according to the instructions (I always add a teaspoon of vegetable soup granules). Sauté the finely chopped onion and mushrooms in a pan with a little vegetable oil for about 5 minutes. Now slice the cucumber and mix it with the cream, then simmer briefly. Season to taste with the spices. Stir in the cooked quinoa and let it stand for 2 minutes without heat. Now add the finished side dish to the meal.
