Bulgur with tomatoes

Ingredients for 4 servings:

  • 500 g bulgur
  • 250 g tomatoes
  • 1 m.-sized onion(s)
  • 100 g butter
  • 1 tbsp tomato paste
  • 1 tsp Pul Biber (Turkish paprika spice, hot)
  • 1 tsp salt
  • 750 ml vegetable stock

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Rinse the bulgur in a sieve. Pour boiling water over the tomatoes, rinse with cold water, and peel them. Remove the stems and finely dice the tomatoes. Peel and finely dice the onion. Heat the butter in a saucepan, add the diced onion, and sauté. Stir in the tomato paste and bulgur and fry both briefly. Add the diced tomatoes, pul biber, and salt, and top up with the broth. Bring everything to a boil, then simmer gently with the lid on for 10 minutes. Remove from the heat and let stand for another 10 minutes.
