My Kind of Whole Wheat Bread

- My kind of whole wheat bread
- 5 g Fresh yeast
- 285 ml Lukewarm water
- 200 g Process spelled flour 1050 + more
- 200 g Wholemeal rye flour
- 20 ml Soy sauce (used to color the bread)
- 1,5 tbsp Pumpkin seeds
- 1,5 tbsp Poppy
- 1,5 tbsp Sunflower seeds
- Rapeseed oil for brushing the baking pan to taste
- Put lukewarm water & crumbled yeast in a mixing bowl (food processor) and stir together. Then add both types of flour and soy sauce one after the other. Knead everything together with a hand mixer (food processor).
- Put in a warm place, covered of course, and let GO there for an hour. Finely chop the pumpkin seeds or grind in a coffee grinder (food processor). Take the baked dough out of the bowl and place on a floured work surface.
- Knead briefly there once with clean hands. First, knead in finely chopped / ground pumpkin seeds, poppy seeds and sunflower seeds one after the other. Grease a fireproof pot (little magician) a little. Then put the bread dough in it.
- Preheat the oven to 220 ° degrees top / bottom heat. Put a lid on the pot and put the whole thing in the bottom rail. Bake there for 30 minutes with the lid on, then remove the lid and bake for another 25 to 30 minutes without the lid.
- After baking, let it rest briefly in the pot, then carefully remove it from the pot (Little Magician) and let it cool completely on a rack.

- This bread can be modified and provided with different seeds and grains depending on your taste. E.g. such as sesame, oat; spelled; Barley flakes or chia seeds.
