Ingredients
 

  • 400 g Rye flour
  • 300 g Spelt flour
  • 250 g Spelled, ground
  • 4 El Oat bran
  • 1 Tl Sugar
  • 2 Tl Nasturtium salt, own production
  • 30 g Sourdough, dried
  • 25 g Yeast fresh
  • 2 El Herb vinegar
  • 400 ml Lukewarm water
  • 4 El Sunflower seeds

Instructions
 

  • I stirred sourdough into warm water and left it to stand for a little while
  • I boiled the ground spelled in a little water, pay attention to the specified amount of water
  • Put the flour in the bowl, as well as the spelled grist and the sunflower seeds, water, yeast and sourdough, pour the lukewarm water over it, add the sugar, salt in another place. Let stand for about 10 minutes, don't forget the vinegar. Then knead well. The longer, the more airy the dough will be.
  • Then let it rise in the oven at 35 degrees for at least an hour. The dough cannot be shaped, so it has to be placed in a baking pan. Then let it rise again in the oven, about half an hour.
  • Then take out and cover with a cloth and preheat the oven to 220 degrees. Put a bowl of water in the oven. Then bake the bread at 220 degrees for about 20 minutes. Then switch down to 190 degrees and bake for another 50 minutes. It takes so long with my oven.
  • Then place on a wire rack and let the bread cool down. I always state the preparation time without walking.
