Katrin's delicious semolina soup from Grandma

Ingredients for 4 servings:

  • 1 liter of milk
  • ½ liter of water
  • 7 tbsp semolina
  • Salt
  • pepper
  • nutmeg
  • 2 onions
  • 1 tbsp margarine
  • 1 egg(s)
  • 2 carrots

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

e.g. as a starter soup for my Quarkkeulchen, it’s filling, quick and delicious!!!

Combine milk and water in a saucepan. Skim off a large cup of cold liquid and stir in the semolina. Bring the milk and water mixture to a boil. Add the stirred semolina and simmer. Season to taste with salt, pepper, and nutmeg. Clean and coarsely grate the carrots, then add to the boil. Peel and finely chop the onions, then sauté lightly in the margarine, then add to the soup. Finally, whisk the egg in a cup and pour it into the soup, then bring back to a boil briefly. Serve as a starter soup or simply enjoy with a slice of dark bread and butter.
