Hearty cheese puff pastry cake

Ingredients for 1 servings:

  • 300 g puff pastry
  • 400 g cheese, grated
  • 350 g double cream cheese
  • 300 g sweet cream
  • 125 g bacon, diced
  • 7 eggs, size M
  • 1 tsp sweet paprika powder
  • salt and pepper
  • Nutmeg, freshly grated

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

for a 26cm springform pan

Mix together the grated cheese, cream cheese, cream, eggs, and diced bacon, and season with salt, pepper, paprika, and nutmeg. Place the puff pastry in a greased and floured 26cm springform pan. Press the sides and edges down firmly, brushing the dough with a little water if necessary and rolling up any excess edges as desired. Spread the mixed cheese filling on top. Bake in an oven preheated to 200°C (top/bottom heat) for about 90 minutes on the middle rack, until the cake is golden brown and the filling is firm enough to slice. Cover the springform pan with aluminum foil or baking paper if necessary and lower the temperature slightly to prevent the surface from overbrowning. After baking, remove the cheesecake from the oven, let it cool, remove it from the springform pan, and serve warm. It also tastes delicious cold with a glass of white wine.
