Jana's braised cucumbers

Ingredients for 4 servings:

  • 3 braised cucumbers
  • 2 beefsteak tomatoes
  • 1 pack of ham cubes, approx. 125 g
  • Oil or margarine
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the braised cucumbers, scrape out the seeds, and then cut the cucumbers into bite-sized pieces. At this point, you should taste each cucumber; I occasionally had bitter ones, which ruined the whole dish. Heat the oil in a medium-sized casserole dish and first lightly fry the ham cubes, then fry the cucumber pieces over medium heat, add a little salt, and cover with a lid. In the meantime, peel the beefsteak tomatoes. Cut the tomatoes into small cubes and add them to the braised cucumbers. They should already smell good. Let everything simmer gently for about 15-20 minutes and season with salt and pepper at the end. You want to retain the cucumber flavor. You don’t need any broth or other powders. I find mashed potatoes best with this, boiled potatoes are also fine, or rice, bread—whatever you like.
