Ingredients for 1 servings:

  • 150 g flour
  • 1 tsp baking powder
  • 65 g sugar
  • 2 egg yolks
  • 1 tbsp milk
  • 50 g butter
  • 2 packets of vanilla pudding powder
  • 200 g sugar
  • ½ liter milk, cold
  • ½ bottle of lemon flavoring (baking oil)
  • 750 g quark
  • 3 egg whites
  • 1 egg yolk for brushing the cake
  • e.g. milk, 1 tbsp

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 2 hours 15 minutes

Put half of the flour and baking powder into a bowl. Make a well in the center, add the sugar, egg yolk, and milk. Mix the ingredients into a paste. Place the butter pieces on top, cover with the remaining flour, and knead into a firm dough. Chill the dough for 30 minutes. Line the bottom of a springform pan with two-thirds of the dough, using the rest for the sides. Prick the bottom several times with a fork. Pre-bake for about 15 minutes at 200°C (400°F) or 180°C (350°F) with a fan. For the topping, mix the custard powder and two-thirds of the sugar with a quarter liter of milk. Heat the remaining milk, then stir in the mixture; do not let it burn. For the egg whites, beat the remaining sugar with the egg whites until stiff peaks form. Fold the egg whites, cooking oil, and quark into the pudding, whisking continuously with a whisk. Pour the pudding mixture onto the cake batter and brush with egg yolk, mixed with a tablespoon of milk if desired. Bake at 150°C (300°F) or 130°C (convection oven) for 50 to 60 minutes.
