Oven-baked lamb ribs with potatoes

Ingredients for 4 servings:

  • 1 ½ kg lamb rib(s)
  • 1 kg potatoes
  • 1 tbsp paprika powder, sweet
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • Salt
  • 2 sprigs rosemary

Preheat the oven to 180°C (top/bottom heat). Wash the lamb ribs, pat dry, and season with salt. In a cup, mix the paprika powder with the oil, 1 teaspoon of salt, and the crushed garlic, then brush the mixture over the lamb ribs. Quarter the potatoes (with their skins on) and dice the onion. Mix both ingredients well in a bowl with the paprika, garlic, and oil paste. Spread on a baking tray and place the marinated lamb on top. Divide the rosemary sprigs and arrange them on the baking tray. Place everything in the oven for about 60 minutes. After about 30 minutes, increase the oven temperature to 200°C and finish roasting. Serve with a green or mixed salad and white bread.
